Looking for a delicious, easy, and filling high-protein breakfast that’s also in a form of pancakes? Look no further, these Greek yogurt pancakes will change the way you think about pancakes. Greek yogurt gives them a nice and light consistency while keeping the calories in check and allowing you to get creative with your toppings. In my kitchen, bananas, fruits of all kinds, and some chocolate chips are always an option when making pancakes, along with some low-calorie Maple syrup but you can tweak the toppings to your preferences. This stack has been my personal go-to when I am looking for a tasty pre-workout, breakfast in a rush, or a dessert that allows me to indulge in something yum while keeping my health in check. As always, this stack goes very well with a cup of espresso or a black tea.

170g (2/3 cup) of Greek yogurt plain non-fat
1 egg
30g of whole wheat flour
1 scoop of vanilla protein
1 tsp of baking soda/powder
Fruit for toppings
Optional - 1 tsp of vanilla extract, 1


Step 1 – in a bowl, mix flour, protein, and baking soda/powder, in a separate bowl, whisk an egg and add Greek yogurt along with optional vanilla extract Step 2 – mix wet and dry ingredients together to form a dough, mix it lightly, do not overmix Step 3 – heat up a pan on medium heat, form pancakes with a “forkful” of batter, cook for approximately 1.5 minutes the first side and 45 seconds after flipping Step 4 – stack, and top with desired fruit or 1 tbsp of chocolate chips, enjoy with coffee or a cup of tea
