Homemade Nutella Loaded Healthy Churros

Recipe story

Experimenting is a part of being creative in the kitchen and not being afraid to try to “whip” together a recipe you haven’t tried before, hoping it will turn out ok. Well, these churros are an example of just that – trying something new while keeping the healthy cooking hat on, keeping it budget-friendly, and as simple as humanly possible. My breakfast has been a pleasant surprise of sweetness from fresh fruit glaze, a little bit of bitterness from the cocoa powder, and crunchy churros accompanied by a big ol’ mug of black, dark-roast coffee. A perfect start to a productive Friday morning if you ask me, or any morning of the week for that matter. Caution – if you’re not used to the slight bitterness of the unsweetened cocoa powder, simply play around with the measurements of the sweetener that you use to complement the cocoa in the “Nutella” filling. Have fun with it.

Ingredients

Sliced 100% whole wheat bread
2 Whole eggs
Cinnamon
1/2 tsp of vanilla extract
Non-fat Greek yogurt
Unsweetened 100% cocoa powder
Natural sweetener of your choice
Optional - fresh fruit for toppings
Optional - 20 ml of milk

Instructions

Let’s talk “Nutella” filling. I made it combining Greek yogurt with unsweetened cocoa powder and adding bits of Stevia as a sweetener until the bitterness of the cocoa was gone and a slight sweetness prevailed in the mixture. You can also melt some dark chocolate in a microwave-safe dish in a microwave a mix that with about 20g of Greek yogurt. It depends on a personal preference. Step 1 – mix 20-30g of Greek yogurt and sweetener with cocoa powder or chocolate source of your choice. Note: the calories and macronutrients are calculated using 100% unsweetened cocoa powder so using more sugary sources will change the macro and calorie content of the meal Step 2 – in a separate bowl or a container, crack open 2 eggs and mix with vanilla extract and cinnamon and add the milk if desired, whip everything together with a fork Step 3 – cut off the “hard” edges of the sandwich bread slices forming “dough squares shapes” and gently press down over the entire dough area with your palm or with a cooking roller to make it flat and thin Step 4 – apply a thin layer of the chocolate mix onto each of the bread slices and roll the slices into little churros Step 5 – dip the rolled churros in the egg mixture and let any access mixture drip Step 6 – spray a frying pan with a non-stick cooking spray, turn the heat to the Medium, and when the pan is heat up, place churros on the pan and fry each side until golden brown and crunchy (2-3 minutes/top and bottom sides) or until desired consistency Step 7 – OPTIONAL for fruit glaze – in a separate pan, mix desired amount of fruits (blueberries, strawberries, raspberries, etc.) and cook on medium heat until a “saucy” consistency is reached, stirring occasionally Top with fruit glaze, fresh fruit, Greek yogurt, or just cinnamon and a little bit of powdered sugar and enjoy
