4 whole eggs
1/2 cup of chopped spinach
1/2 tomato
100g of chopped broccoli
28g (0.8 oz) of shredded mozzarella
6 strips of turkey bacon
Spices - I used salt & pepper, paprika, and Italian seasoning


Step 1 – pre-heat oven to 375 F/190 C Step 2 – wash and chop spinach, broccoli, and tomato, in a bowl/container, crack open eggs and whisk thoroughly for about 1 minute, add spices, mix, and add chopped vegetables and mozzarella, cut bacon strips in half Step 3 – spray a muffin tin with non-stick cooking spray, place the bacon strips on the bottom of the tin to make a “cross” and fill the muffin compartments with the mixture, divide the mixture evenly Step 4 – bake for 17-22 minutes or until a fork comes out relatively dry when you stick it in the egg muffin Enjoy!
