Chickpea vegan healthy bowl

Recipe story

Are you in a rush and need a quick vitamin boost that will fill you up for the rest of the afternoon? This recipe might be just for your situation – it’s easy, few ingredients needed, and it is a vegan way of saying “I will crush the rest of my day”. This lunch has been my go-to when I am looking for a fiber-filled meal with a lot of color and vitamins and minerals. Also, this meal is almost spill free as the only liquid that goes into the meal is a bit of oil that will get absorbed by the veggies and the chickpeas. You can make this as spicy or as savory as desired by adding or removing some spices or adding some additional herbs. Give this recipe a try and if you enjoyed it, let me know on Instagram or Facebook what you thought!
