Are you in a rush and need a quick vitamin boost that will fill you up for the rest of the afternoon? This recipe might be just for your situation – it’s easy, few ingredients needed, and it is a vegan way of saying “I will crush the rest of my day”. This lunch has been my go-to when I am looking for a fiber-filled meal with a lot of color and vitamins and minerals. Also, this meal is almost spill free as the only liquid that goes into the meal is a bit of oil that will get absorbed by the veggies and the chickpeas. You can make this as spicy or as savory as desired by adding or removing some spices or adding some additional herbs. 1 can of chickpeas
1/2 onion
1 tbsp of garlic
1/4 cup of sliced sweet peppers
150g of chopped broccoli
1/4 cup of both corn & sweet peas
Spices - I used Cajun, paprika, cumin, salt & pepper, and a pinch of chili


Step 1 – heat up oil in a skillet or a frying pan while you chop up the onion and the vegetables Step 2 – start by sauteeing the onion and a garlic in a pan for about 2-3 minutes on medium heat, continue by adding chopped broccoli, sweet peas, and corn, add spices, and chickpeas (thoroughly washed) cook for additional 5-7 minutes Step 3 – place everything in a bowl and top with sliced sweet peppers, garnish with green onions or parsley flakes
