It’s pancakes time! Let’s face it, every time you see a good looking stack of fluffy pancakes on social media, you might think “man, why can’t I make these? They must be so hard to do”. Well with this recipe, you can be well on your way to a new realization that literally there are few foods that are easier than these pancakes (couscous is one of them, you literally just soak it in hot water). The best thing about pancakes is the versatility that you can use in terms of toppings, ingredients for the batter, and just overall flavors. You can make pancakes as simple as with 2 ingredients and within 5 minutes you have a personal pancake stack, or as “difficult” as some recipes that call for a list of 30 ingredients, mess your kitchen up, and might not be healthy at all. Ingredients

30g of plain, non-fat Greek Yogurt (1/4 cup)
1 whole egg
2 egg whites
50g of banana
40g of oats
1 tbsp ground flax seed
1 tsp baking powder
1 tbsp of dark chocolate chips
Non-stick cooking spray

Instructions

  1. In a blender, combine oats, baking powder, and a pinch of salt and blend until you have fine flour (about 15-30 seconds)
  2. In a plastic container/bowl mash the banana with a fork and add yogurt, egg and egg whites, and flax seed
  3. Combine mixture with oat flour in a blender and blend until ingredients are well combined (about 30-60 seconds), after blending, mix in chocolate chips
  4. On a frying pan on medium heat, spray a layer of non-stick spray and form pancakes about 2 inches wide (4-6 cm or as desired)
  5. Cook first side for about 1 minute then flip – cook second side for 30-45 seconds
  6. Enjoy! Serve with fruit such as strawberries, blueberries, bananas, peaches, kiwi
